I fell in love with it in my great aunt’s living room.
When I was a little girl, my great aunt would babysit me, and every so often, my uncle would walk through the door with a small but magical surprise, a fresh loaf of banana bread from his job at Bob Evans. He made sure to bring it especially for me, because he knew how much I loved it.
It wasn’t something my family made at home, so every slice felt rare and special, a treat that carried warmth, comfort, and the quiet joy of being thought of. That simple act stayed with me.
Years later, my own health journey led me to remove gluten, dairy, and eggs from my diet. But when I went looking for banana bread I could enjoy, it was hard to find something that felt like the real thing. So, I decided to create it myself — a version that’s just as rich, moist, and soul soothing as the one I remember, but safe for people like me who have food sensitivities.
